I own a Gen 3 G23 - 1st Glock. I have rather large hands and notice that my normal grip prevents my fingers from laying completely in the finger grooves on the grip. It's only a tiny bit off. Would an undercut trigger guard allow my grip to slide a bit higher allowing my fingers to sit directly into the grooves? Thanks.

It can be done but it will weaken the trigger guard, if that’s OK a rat tail file and some fine grit sand paper will do the job. I hear others do some mods like that to reduce the effects of "Glock Knuckle"

And of course, "altering" the pistol in that manner would void any warranty value you might have from that point forward...Not sure if any grip sleeves that are out there might change the grip enough for you...may want to try a larger model, ie. the G20, G21, to see if they fit the hand better..
